Think I copied this recipe from the age.
Combine 1 litre of milk, 1 chopped brown onion, 8 parsley stalks, 8 peppercorns, 4 cloves and 2 bay leaves. Bring to a simmer over medium heat and then stand off the heat for 15 minutes.
Melt 60g butter over medium heat until foaming, add 1/3 cup of flour and stir 1-2 minutes until mixture bubbles and comes away from the side of the pan. Remove from heat.
Gradually whisk in 1/2 of the strained milk, until smooth and then add remaining milk.
Return to heat and stir until mixture coats the back of the spoon (about 5 minutes).
Stir in 70g grated parmesan.
