Breakfast Pita

Breakfast PitaTravelling this week, so using the blog to keep track of ideas for simple meals that were good (as opposed to the the ideas that seemed good at the time). Today’s breakfast was a success. Quarter split pitas and lay flat. Fill with sliced cheese, tomato slices and half a grilled bacon rasher. Fold pita to encase the filling, then toast in a fry pan coated with a little oil. Flip after two minutes or when the underside of the pita has crisped and the cheese is starting to melt. Cook another minute then remove from heat. Prise the layers apart and add a little fresh tomato sauce and sprigs of watercress to the filling before serving.
