Ottolenghi makes a great salad. Served a twisted version of his Roasted cauliflower, grape and cheddar salad with meatballs as a quick but tasty dinner. Seems only fair that a salad inspired by another salad inspires another.
Did not use the dressing or raisins in this version; instead used a quartered, cored, and sliced apple tossed in the juice of half a lemon. After combining the apple with half a cauliflower broken into florets and roasted, plus the same quantities of hazelnuts, red grapes, and cheddar as the original recipe, drizzled over some olive oil and a dozen splashes of balsamic vinegar.
