This pizza is a based on a topping from its pizza-without-the-dough article, with an injection of flavour inspired by the Incredible Spice Men. Start with a paste made from six roasted garlic cloves squeezed from their skins, a splash of olive oil, and a heaped teaspoon of toasted caraway seeds and half a teaspoon of chilli flakes. Smear the paste over a partly cooked pizza base then scatter a little mozzarella over. Slice a zucchini into thin rounds and char each piece slightly on a grill pan set over high heat. Toss the slices in a little oil and arrange over the base, cover with a small log of goat cheese also cut into rounds and a generous sprinkle of pine nuts. Bake for a further fifteen minutes or until the cheese has browned, then sprinkle with a half cup of finely shredded mint before serving.
