Chorizo Chicken Pizza

Chorizo Chicken Coriander Pesto PizzaStuck to a traditional colour palette today. Bake a red pizza base at 200ºC for 15 minutes or until starting to colour. Remove from oven and top with a large handful of grated mozzarella. Dot the cheese with poached, drained chicken thigh fillets roughly chopped, olives, chorizo slices cut into wedges, three or four torn boconcini, and about half a cup of coriander pesto. Bake for a further 10 minutes or until molten and tips of the chicken and sausage start to brown.
