Alongside the purple cauliflower at the market was a bunch of brilliantly coloured spinach which made its way into our farro salad we had with dinner. Chopped it finely and added it to the pot of simmering grains so as to blanch it in the final minute of cooking time. Also served the bulgur meatloaf shaped into meatballs (added an egg to bind the mixture) and roast cauliflower.
